Honey Chipotle Chicken Fajitas are the perfect easy weeknight dinner. You can make them in under 30 minutes in one sheet pan. Everyone in your family will enjoy this healthy and flavorful meal. Leftovers can be added to tacos, salads, pasta, sandwiches and much more!
2 large chicken breasts (1.5 pounds)
1 red bell pepper
1 green bell pepper
1 yellow bell pepper
3 tbsp olive oil
3 to 4 tbsp adobo paste
2 tsp fresh garlic, minced
1 tbsp chili powder
1 tsp coriander
1 tsp paprika
1 tsp oregano
1/2 tsp onion powder
1/2 tsp cumin
1 tsp salt, more to taste
2 tbsp honey
1/4 cup shredded Mexican cheese
Preheat your oven to 425°F.
Marinade chicken with olive oil, adobo paste, honey, and the seasonings listed above for a at least an hour.
Cut the marinated chicken into strips and slice peppers in colors of your choice. We enjoy using red, green, and yellow peppers.
Mix with the chicken and peppers together and lay flat on a sheet pan to make sure everything cooks evenly.
Bake at 425°F for 20 minutes or until the chicken is fully cooked. Optionally, add cheese on top and let it melt in the oven for 1-2 more minutes.
Serve with tortillas, lime, avocados, red onion, and sour cream.
