Creamy Pesto Chickpeas are perfect for a quick and easy lunch or dinner. The pesto gives this dish so much flavor and will be enjoyed by your entire family. Serve with crostini for a hearty meal. This recipe is also completely vegan.
1 large white onion
4 cloves garlic
Olive oil
3 large tomatoes
2 tbsp tomato paste
2 cans chickpeas
Half jar of pesto
1 cup chicken or vegetable stock
Handful of spinach
Salt and pepper to taste
Finely minced white onion and garlic. Fry in olive oil until soft and brown.
Add in diced tomatoes and tomato paste and let it cook.
Once the tomatoes turn into a thick sauce, add in chickpeas, pesto, chicken or vegetable stock, and spinach. Let it simmer.
Take out a scoop of the sauce, blend it, then add it back inand mix.
Garnish with fresh basil and parsley before serving.
