These Tiramisu Cookies taste just like the classic tiramisu dessert, but in a cookie form, which if you ask us, might be even better! The thick coffee cookies are soft and chewy with a smooth, creamy, mascarpone frosting dusted with cocoa powder for a richer flavor. They are sure to be a crowd-pleaser! The rich expresso and cocoa powder flavors stand out and taste delicious. Give this recipe a try next time you bake cookies.
Cookies:
⅔ cup Unsalted butter (room temperature)
½ cup Brown sugar
⅓ cup Granulated sugar
1 Egg (room temperature)
1½ cups All purpose flour
1 tablespoon Espresso powder
1 Teaspoon Salt
1 Teaspoon Baking soda
Mascarpone Frosting:
⅔ cup Mascarpone (cold)
½ cups Heavy cream (cold)
⅓ cup Powdered sugar (sifted)
Topping:
1-2 tablespoon Cocoa powder unsweetened
Line 2 baking pans with parchment paper.
In a large bowl, whip room-temperature butter with brown and granulated sugar for a few minutes with a hand mixer.
Mix in the egg.
In a separate bowl, sift and mix flour, espresso powder, salt, and baking soda. Add the dry ingredients to the wet ingredients and fold together with a rubber spatula.
Divide the dough into 10 equal balls and place on the parchment-lined baking pans and refrigerate for 1 hour.
Preheat the oven to 345°F and after 1 hour in the fridge bake the cookies for 15 minutes.
Let the cookies cool while you make the frosting. Whip cold heavy cream, mascarpone, and sifted powdered sugar for 2-3 minutes until fluffy.
Pipe the frosting onto the cooled cookies and dust them with cocoa powder.
