WITH CREAM CHEESE FROSTING

Fall means it's officially everything-pumpkin season. What better way to embrace pumpkin spice flavor than with these pumpkin spice cookies. They are the perfect mix between soft and moist like a cake but still chewy. The cream cheese frosting takes this already incredible cookie to another level. Make these cookies to share with all your friends and family, or just to enjoy by yourself!
10 tbsp softened unsalted butter
½ cup brown sugar
½ cup granulated sugar
1 cup pumpkin puree
1 ½ tsp vanilla extract
2 ½ cups all purpose flour
¾ tsp baking soda
¾ tsp baking powder
Pinch of salt
1 tbsp cinnamon
¼ tsp ground nutmeg
¼ tsp ground cloves
½ tsp pumpkin pie spice
4 oz cream cheese (room temperature)
1 tbsp milk
½ cup powdered sugar
Preheat your oven to 350°
Use a hand mixer to mix together ½ cup unsalted softened butter, ½ cup brown sugar, and ½ cup granulated sugar in a large bowl.
Add in 1 cup pumpkin puree and 1 tsp vanilla and mix well.
Fold in 2 ½ cups all purpose flour, ¾ tsp baking soda, ¾ tsp baking powder, a pinch of salt, 1 tbsp cinnamon, ¼ tsp ground nutmeg, ¼ tsp ground cloves, ½ tsp pumpkin pie spice.
Roll the dough into balls and flatten on a baking sheet.
Bake for 15 minutes and prepare the frosting while they cool.
Mix together 4 oz cream cheese (pumpkin spice or original flavor), 2 tbsp butter, 1 tbsp milk, ½ tsp vanilla extract, and ½ cup powdered sugar until the frosting is smooth.
Frost the cookies once cooled and optionally sprinkle with cinnamon.
