STRAWBERRY LEMON BLONDIES

👥Serves 12 people

These Strawberry Lemon Blondies are sweet and tart and the perfect dessert during summer or spring. Each bite is filled with fresh strawberries and a tangy burst of fresh lemon that perfectly compliments the strawberries. The pink strawberry glaze is naturally colored and flavored. This refreshing and indulgent treat is great to enjoy at picnics, parties, or just as a fun sweet treat. They are soft and moist and melt in your mouth. Make sure to make these the next time you have fresh strawberries!

INGREDIENTS

Blondies 

  • 1 cup unsalted butter, room temperature

  • ¾  cup sugar

  • 1 large egg

  • ¼ cup fresh squeezed lemon juice

  • 2 ¼  cups all purpose flour

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 cup fresh strawberries, diced

Glaze

  • 1 cup powdered sugar, sifted

  • 2 large strawberries

  • 1 tbsp lemon juice


INSTRUCTIONS

  1.   Preheat your oven to 350°F and line a square 9 inch baking pan with parchment. 

  2. Cream the butter sugar together until fluffy and then beat in the egg.

  3. Beat in the lemon juice once the egg is fully incorporated. It is ok if the lemon juice does not fully mix in.

  4. In a separate bowl, whisk together the flour, baking powder, and salt.

  5. Add the flour mixture into the wet ingredients and mix until there is no more dry flour. 

  6. Fold in the diced strawberries gently. 

  7. Spread the mixture into a pan with a large spatula and spread as evenly as possible.

  8. Bake for 30-35 minutes or until the edges just start to turn golden. A toothpick should come out moist but not wet when inserted into the center. Let this cool on a rack .

  9. Remove the leaves from 2 large strawberries and puree in a small food processor. Strain the puree to get 1 tbsp of puree.

  10. Whisk together the sifted sugar, strawberry puree and lemon juice until fully mixed. Add more lemon juice to make your glaze thinner and more powdered sugar to make your glaze thicker if desired. 

  11. Once the blondies have cooled, spread the glaze over it. Let the glaze set before slicing into 12 pieces.
