If you are looking for the perfect breakfast to make for Mothers Day, you just found it! This Strawberries and Cream Pancakes with a homemade strawberry sauce and whipped cream is sure to make you the favorite child. The strawberry sauce is heavenly and tastes good enough to eat by the spoonful! The pancakes themself are so light and fluffy and perfectly soft! And, of course you need some fresh homemade whipped cream to top it all off. The recipe can even be made easier in the morning by preparing the strawberry sauce and whipped cream ahead of time. We can guarantee you'll never go back to eating plain pancakes after trying this recipe!
Sauce
1 lb strawberries, diced
¼ cup granulated sugar
1 tbsp freshly squeezed lemon juice
¼ tsp vanilla
salt
Pancakes
1 cup all purpose flour
1 cup heavy whipping cream
1 tbsp freshly squeezed lemon juice
1 tsp baking powder
½ tsp baking soda
Salt
1 egg, room temperature
¼ tsp vanilla
2 tbsp butter, melted
Whipped Cream
½ cup whipping cream
2 tbsp powdered sugar
¼ vanilla extract
Heat a large saucepan over medium heat and add diced strawberries, sugar, lemon juice, and a pinch of salt. Stir for about 5-8 minutes or until the strawberries began to resemble a thickened sauce. Remove from heat and mix in the vanilla. Set aside.
Mix together 1 cup of heavy whipping cream and lemon juice in a bowl to react.
Once the cream and lemon juice have reacted, whisk in the egg melted butter, and vanilla. Combine well.
Whisk together flour, salt, baking soda, and baking powder in a medium mixing bowl.
Pour the wet mixture into the dry mixture and stir well. Add in ½ cup of the strawberry sauce and until just combined.
Add some butter to a large frying pan over medium-low heat and let it melt. Add ¼ cup of batter to the pan. Let the pancake cook for about 2 minutes or until it bubbles start to form on the top and the bottom starts turning golden brown. Flip and cook for 2 minutes on the other side. Repeat until all the batter is used up.
While the pancakes cook, whip together whipping cream, powdered sugar, and vanilla with a stand mixer or hand mixer for about 4 minutes until medium peaks form.
Assemble by stacking 3-5 pancakes on top of each other and topping with some of the strawberry syrup and homemade whipped cream. Enjoy!
