SINGLE SERVE PUMPKIN CAKE

️🕒Ready in 5 minutes       

👥Serves 1-2 people.

This single serve pumpkin cake is perfect for when you are craving the pumpkin flavors of fall, but don't want to spend time baking an entire cake. It is baked in the microwave and done in under 5 minutes. Also, it is high in protein and the perfect healthy snack for a sweet tooth.

INGREDIENTS

  • 42 grams of protein powder

  • ½ tsp vanilla extract

  • ¼ tsp salt

  • ½ tsp pumpkin pie spice

  • 1 tbsp pumpkin puree

  • ¼ cup water/almond milk/regular milk


INSTRUCTIONS

  1. Start by mixing 42 grams of vanilla or pumpkin pie protein powder with a ½ tsp pumpkin pie spice, vanilla, baking powder,  a pinch of salt, 1 tbsp of pumpkin puree and ¼ cup of milk. We used regular milk but this can be substituted for almond milk or water.

  2. Pour your batter into a microwavable dish and optionally top with chocolate chips.

  3. Microwave for about a minute. The timing may vary based on the strength of each microwave. 

  4. Let the cake sit for a minute outside of the microwave to finish cooking before eating.
