AVOCADO 

EGG ROLLS

👥Serves 10 people

Avocado Egg Rolls are the perfect game day appetizers. It's quick and easy and tastes delicious. This copycat Cheesecake Factory recipe is crunchy on the outside, with a soft and flavorful avocado filling. It tastes amazing on its on or paired with cilantro ranch dressing or your favorite dipping sauce. 

INGREDIENTS

  • 1 cup vegetable oil

  •  ½ cup sun-dried tomatoes

  • ½ red onion

  • Handful cilantro

  • 4 avocados

  • juice of ½ lime

  • salt

  • 10 egg roll wraps


INSTRUCTIONS

  1. Heat vegetable oil in a large skillet over medium-high heat.

  2. Chop the sun-dried tomatoes into smaller pieces if they are not already in smaller pieces.

  3. Finely dice ½ red onion and chop some cilantro. Cut 4 avocados into small squares.

  4. Add the sun-dried tomatoes, red onion, cilantro and avocados into a large bowl. Squeeze in the juice of half a lime and add salt to taste. Mix everything together.

  5. Lay a egg roll wrapper flat and place a large spoonful of the avocado mixture in the center. Be careful not to overfill.  Rub the edges of the egg roll wrappers with water using your finger.

  6. Bring the bottom corner of the wrapper into the center and roll it tightly over the filling. Fold in the sides and roll the rest of the way. Press to seal. 

  7. Fry the egg rolls in the hot oil for about 2-3 minutes on each side. Remove and place on a plate lined with a paper towel.

  8. Serve with a dipping sauce!
