HEALTHY STOVETOP GRANOLA

Discover the best granola you've ever tasted with this easy stovetop granola recipe. Made with rolled oats and toasted to golden perfection, this granola is naturally sweetened and seasoned just right. The addition of nuts, seeds and dried fruit brings a delightful mix of textures and flavors. The best part of making your granola at home is that you get to customize it to your taste and choose exactly what to add in. Granola is perfect for a healthy breakfast or snack that you can prepare in advance. This stovetop method makes it even easier to make at home since you don't have to worry about turning on your oven and have greater control over toasting the oats. These delicious granola clusters that are both crisp and satisfying. Enjoy it on its own or over a bowl of yogurt or a fruit parfait.

INGREDIENTS

  • 2 tbsp coconut oil

  •  3 cups rolled oats

  • ½ cup sweetener (e.g. maple syrup, honey, or agave)

  • 1 tsp salt

  • ½ tsp ground cinnamon

  • 1 tsp vanilla extract

  • ¾ cup nuts, seeds, or dried fruit

  • ⅓ cup chocolate chips (optional)


INSTRUCTIONS

  1.  Line a baking tray with parchment paper. Set aside.

  2. Melt coconut oil in a large pan over medium heat. Add in your oats and stir constantly for 4-6 minutes until the oats are toasted.

  3. Reduce heat to medium-low and stir in your sweetener of choice and salt.

  4. Stir for a minute until lightly golden and cooked. 

  5. Add in your choice of nuts, seeds, or dried fruit. We chose almond slices, pecan half, pumpkin seeds, and dried cranberries. Stir and cook for one more minute.

  6. Spread immediately over the prepared baking tray and press down with a spatula to form clusters. 

  7. Allow the granola to cool and harden until crisp. Once cooled, break into clusters and optionally add in chocolate chips.

  8. Store in an airtight container at room temperature or in the refrigerator.
