This fun twist on the classic childhood snack is perfect for St. Patrick's Day, although we will definitely be making these year-round! The chewy and gooey marshmallow bars have a perfect crunch with the crispy Rice Krispies and Lucky Charms cereal. They are such an easy, nostalgic dessert that only takes 15 minutes. There's no reason not to make them!
½ cup butter
10 oz marshmallows
2 cups Rice Krispies Cereal
3 cups Lucky Charms
¾ cup Lucky Charms, marshmallow and cereal separated
¼ tsp salt
Measure out ¾ cup of Lucky Charms and separate the cereal from the marshmallows.
Set aside the separated cereal and melt ½ cup butter in a pot on medium-low heat on your stove. Stir to prevent the butter from burning.
Add in your marshmallows once the butter has melted. Mini marshmallows work best for this recipe but any size will do. Continue stirring.
When the marshmallows are 75% melted, remove the pot from heat. Mix in the Rice Krispies, 3 cups Lucky Charms, and the cereal without the marshmallows that you separated earlier. Be careful not to overmix.
Line a 9x12 inch baking tray with parchment paper and press the cereal mixture into the tray evenly. Add the separated marshmallows on top and refrigerate for 30 minutes.
Once chilled, cut into 12 squares. Spraying your knife with oil or coating with butter helps cut the Rice Krispies easily.
